While you are waiting for the schools, maybe you could do sophia courses. You could start with English comp II, microecon and macroecon. You'd probably need those wherever you go.

If the OP decides on UMPI I would not waste my time on Eng Comp 2 on Sophia. It takes too long and it's 6 papers. UMPI is 1 paper. TESU has a TECEP for Eng Comp so that would also be faster.

I personally would do Study.com's Biology 101 w/lab, and one other course.
