I just heard back from a TESU advisor and they claim that none of the Coopersmith or the Sophia course will apply towards my degree. ☹

I think your TESU advisor is completely mistaken. Sophia's Intro to IT is CIS-107 and CIS-107 is currently sitting in group 2 of my AOS.
