TESU's BSBA is the only big3 Bachelors that you can test out of the capstone for. TESU's other Bachelors programs require the capstone course.
Excelsior and COSC require capstones for their degrees.

TESU and COSC don't have capstones for any of their AA's. EC looks to have capstones for all of their AA's.
If you're looking to get an AA at one of the Big 3, COSC wins hands-down for pricing. TESU was good until the Residency Waiver fee kicked in. If they made it half the price of the BA Residency Fee, then it might make sense, but adding $2,000 to the AA cost is way too high.

Sorry, I misread the question. You're asking about AA, not bachelors.
TESU's AA does not require a capstone. I'm not familiar with the other two's AA programs, but I would assume it wouldn't be required over their either.

TESU AA or AS degrees have no capstone but do have cornerstone ($300) must be taken at TESU. Other associate degrees do have capstone requirement such as the AAS degrees or human services degree.
COSC AA or AS degrees do not appear to have a capstone course but do require a cornerstone course be taken at COSC. It looks like COSC only requires capstone for bachelor degrees.

Most of TESU's associate's degree programs require a capstone, and you can't really tell by what the degree is called. The capstone for most of them (usually but not always an AAS or ASAST which is as much of an AS degree as the ASNSM programs) is APS-295. The AA (an AA degree with a capstone) in Human Services has a different capstone. TESU's Associate in Art, ASNSM programs (math, computer science, and biology), AAS (this is an AAS with no capstone) in Criminal Justice, and ASBA do not have a capstone.

I just checked a few, and then thought that it would apply to all of them. The AA in General Studies/Liberal Studies also doesn't have a capstone.
