I think Latin would be easier to learn than Chinese.

Unless of course, you were born into a Chinese-language environment, or learned at a very early age. Then again, nobody recommended Chinese to the OP, though both Latin and Chinese come in very handy if one is trying to get an understanding of Ezra Pound's Cantos.

What I'm really looking for is 3 semesters of sophomore level language credit (school's requirement), preferably Latin (student's preference). I initially thought that there wouldn't be any way possible to enroll in a sophomore level language class without prerequisites such as 6 hours of freshman level language.
There are sophomore level language classes on medical terminology that have no prerequisites.
University of Colorado at Denver:
LATN 3000, Medical Terminology-Online (3 credits)
The course enables students to understand medical terms by learning the Greek and Latin word elements that form these terms.
University of Oklahoma:
CL C 2413.995 or 996 - Medical Vocabulary: (Walker-Esbaugh- ONLINE)
Medical Vocabulary. Prerequisite: sophomore standing. Designed to be of special use to students planning a career in the Allied Health professions. Study of the basic Greek and Latin elements of medical terminology through the analysis of select vocabularies and word lists.
University of Florida:
CLT 2049. Medical Terminology (3). This course introduces students to the medical and technical vocabulary based on Latin and Greek elements in medical Latin and English.
UPDATE: All of the above schools said they don't consider the courses to be language courses.

U of H won't say yes or no, only that they don't know. I don't expect this to work, but sometimes you get lucky.

I would be very surprised if any school accepted medical terminology courses as language credits. They are not remotely comparable.
