Lamar University is offering free graduate and undergraduate level courses for non-degree seeking students. It is stated for the Fall 2025 term, about half of the courses have already started, with the other half starting in October. I applied and it took 2 weeks to hear that they accepted me.
It is first come first serve, but it also mentions a waiting list, so possible they extend this into Spring 2026
