I would take the DSST nutrition exam (which I know nothing about btw) right now if it were me... even if they don't end up accepting it, it was worth a shot while you pursue other means to fulfill the requirement. It's only about 100 bucks.

Plus taking it now will ensure the transcripts would be processed and everything by May 20th... about a month.
