No, you don't get access to anything until a few days before class starts. And you can't register more than about a month and a half in advance, IIRC.
Thanks for the reply. Have not signed up for any Tesu courses yet. Was hoping assignments would be available in advance.

I have turned stuff in 1-2 hours late before, haven't got deducted for it yet though each professor can use their own judgment. Some post the late policy and how much they will deduct for being late.
Ask for an extension if you think you will be late.
There are limits to the mentor's discretion. It was explained to me that the mentor is required by school policy to dock points for late assignments if the late assignment is not arranged ahead of time. I'm sure for small amounts of late like you describe, they can just not bother to notice, but it's always a good idea to email the mentor if you are concerned about not making an assignment on time. Even if you are frantically emailing them the day it's due, it can give them room to say you followed the school's policy of arranging ahead of time. Obviously, you SHOULD email much sooner, if possible.
I started a new job at the same time I started my capstone, so I spent my entire capstone course falling farther behind little-by-little. I always notified them ahead of time and the mentor was happy to work with me. I ended up filing for a course extension, which I used about two weeks of.

What degree are you going for? What courses are you missing? What is Practicum and which Capstone? I assume you're NOT paying the residency waiver and taking the courses instead. If you are a full time student and not working and/or have nothing to do, practically no life except for studying and completing assignments, you can try it - otherwise, three of your courses are upper level and have lots of writing... If assignments and such were posted well in advance I planned on trying to get all the courses I needed for my degree programs in one TESU semester and using extensions if needed as opposed to paying for two semesters. I'm skeptical to post anything on the forums as TESU will change the program requirements at the drop of a dime. I'm not sure how the 8-week extensions work. Does anyone have any experience using them?
What degree are you going for?
I'm completing a BA in History and BS in Organizational Leadership.

<gasp, it seems my assumption is correct> That's what I was thinking from what you wrote above, anyways, the BSOL isn't test-out friendly and I was wondering if you were going to use tuition assistance or reimbursement. What I would recommend is exactly that, the 8 week extension for the two Capstones, the other less writing intensive courses should be fine for you. You may want to reconsider the BSOL as I have been recommending the BSBA Organizational Management or Operations Management instead because it has ACBSP and you can get a MSOL at UMPI/UMASS Global for cheap.
