Will an Associates Degree Satisfy Gen. Ed. at the Big 3? If yes are there any restrictions i.e. AAS, AA, AS, or AGS?

For TESC it would most likely satisfy some gen eds but would depend on what classes you take. TESC looks at each individual credit that you are transferring in. TESC does not accept an associates degree as a block of credit. TESC does have a very flexible transfer policy. For the AAS degrees some of the credits might be placed in the electives section depending on what courses were taken. TESC will accept some PLA, challenge exams, and other credits from RA colleges that other colleges might not accept. TESC does look at the source of credits so some FEMA credits or online non credit courses/open courses might not be accepted unless it was accompanied by a challenge exam, then TESC might consider it.

No. Each credit is evaluated individually.

Yup - what cookderosa said. I had an associate's in Dietetic Technology and all my gen ed's were not satisfied. I did convince them to use one of my nutrition courses to count toward a TESC gen ed course for women's health. They required me to obtain a course description and once I did they applied it.
