I'm planning to take the sat on May 7; as the website states: results come in on Jun 14 (a late date to apply to colleges). Is there a way to speed things Up?

I wonder if you could go ahead and apply now with a note added to the application about your expected test date.
AS in 2010 and BS in 2013 at Excelsior College - Transcripts and Costs
MS Biostatistics in 2019 at Texas A&M University - Graduate School
