Easy 300 Level Courses

Hi -

I’m currently looking to get my bachelor’s quickly so I can check the HR box as I have over 25 years of work experience.

Can anyone recommend any 300 level elective  courses you found easy?  I know this question is a bit subjective.  I need to find 8 courses.
