I did a bit more research.
Be sure to check out the latest Liberal Arts Catalog pages 37 and 38. It gives quite a bit of guidance for EC exams/courses that meet the major requirements. Anything listed as PSYx is an ECE exam. (X is the important part to denote an exam option.)
Assuming you do all of the required work for the major and capstone (18 UL and 9 LL credits), that leaves only 3 UL credits in Arts & Science, 2 LL credits in anything, and 9 UL credits in anything. Just make sure you finish that second depth.
What are you planning to do with this degree? If you want to go to graduate school, you may want to check their admissions requirements and make sure using exams for the major/degree will be okay.
