Your transfer classes won't bring in anything for your GPA- so if you don't take the anthropology or psychology courses from TESC directly, you don't get GPA points.
I'm not sure that my two cents are welcome, but I'll share them anyway. Anthro and Psych are both fields that require Masters or PhD level coursework to work in-field. A faster (and SIGNIFICANTLY cheaper) option would be to simply earn your undergrad in Social Science (where you can do all psych and anthro classes/exams for the entire major) and move onto grad school where it's going to be a real bucket of money and a lot of hard work- the undergrad stuff is just spinning wheels. Grad school is the only return on your investment since this is the start of your career, check the box.
**I want to add that I would have a different opinion if this situation was about a brick and mortor university that offered the courses in-department by professors with research opportunities as well as possible referral into the university's phd programs, but since TESC offers none of those standard advantages, not even the courses used for completion of the major, it's not the same thing.
