BYU has an independent study Chinese Poetry (texts in Chinese) course that *might* work. You could ask to see if TESU would approve it.

I wasn't a foreign language major but did complete and get credit for a literature portfolio in Spanish. From what I gathered when I did a mock evaluation, it would have filled that slot. Also, I chose a syllabus (for the portfolio) for a class that had a part 1 and a part 2 so if I wanted to get three more credits, I would have done another portfolio for the part 2 class.
Another option for getting the literature credits is actually taking a class - perhaps a self-paced class at a regionally accredited college.
Portfolios and actual classes for credit are the only two ways I know to get credits for literature in a foreign language.
Any more info on how the portfolio works?
